Simple Chicken Noodle Soup

Indiana has the most interesting weather this winter, -13 degree one day, and then 50 degrees the next. With this weather has come the flu. Ugh, I had the flu in December, and I feel like it's hitting our house again for round two. So off to the store I went, to get ingredients for my simple homemade chicken noodle soup.

Growing up, when one of us was sick my momma always made her chicken noodle soup. Now that I'm older and I don't live with my parents anymore, I've come up with my own recipe, that super quick and simple. I started making this soup around 4pm, and I finished in under an hour!

What you'll need

*Disclaimer, I used a low sodium broth, because I like to season my soups. With that said sometimes I add just a little bit of salt. I season everything to taste, no measuring involved, which is why I've linked almost everything that I use.

Drizzle a little olive oil in your soup pot, and add about a tablespoon of the minced roasted garlic, sautee for a minute. Next add your spinach, onions and carrots to the pot. I personally chopped a handful of spinach, and then added another handful of unchopped spinach, I also added about two handfuls of the shredded carrots, and a half of a red onion. Sauté for a few minutes, then add both your cartons of chicken broth. Turn up heat and bring to a boil.

While you're bringing your pot to a boil, take your whole rotisserie chicken, and cut the breasts off of it, along with any other meat you want, and place the pieces on your cutting board. Give the rest of the whole chicken to your boyfriend, while he's watching a big football game in the living room, and you'll become girlfriend of the year! Cut your chicken breasts into bite size cubes! Add your chicken and spices to the pot, bring to a boil.

In a separate pot bring four quarts of water to a boil. Once water is boiling, add your noodles and cook for 10 minutes. Drain and add your noodles to your soup.
